Ingredients

1 lb of Chicken breast tenders
2 32-oz cartons of chicken broth
1 10-oz can of Rotel Diced Tomatoes with Chillies
1 6-oz can of Black olives (I buy the whole and dice them myself)
2 11-oz cans of Green Giant Southwest Style Corn
I can of black beans
2 packets of taco seasoning
2 cups of dry brown rice (I use 2 bags of Success Boil-in-Bag Brown Rice, just cut them open and pour in)
4 cups of water
Tips
This is good garnished with a little bit of fat free cheese, fat free sour cream, jalepenos, or salsa. My family likes to crumble tortilla chips up in theirs. Just remember to adjust the nutritional info for any add-ins!
Directions
1. Chop chicken into 1 inch pieces.
2. Add chicken and all ingredients except rice to slow cooker. Mix well.
3. Cook for 6 hours on high setting.
4. Add rice. Continue cooking for another 30 to 45 mins.
