Introduction

Another impromptu recipe based on another slow cooker recipe. I didn't have all the ingredients for the other one, so I improvised with what I had in the house. Number of Servings: 6

Ingredients

    * Chicken Breast, no skin - 4 breasts (about 2lbs)
    * *Campbell's Cream of Chicken Soup (98% fat free), 1 CAN + 1/2 can water
    * Baby Carrots, raw, 30 large or about 1.5 cups
    * Celery, raw, 4 stalk, medium (7-1/2" - 8" long) or about 2 cups cut chunky
    * Thyme, fresh - 5 sprigs
    * Rosemary, about 5 sprigs

Directions

wrap rosemary and thyme in cheese cloth and tie together to make a sache.

add carrots and celery to bottom of cooker.

add herb sache

season chicken with salt & pepper (but not too much) and add to cooker

Pour Chicken soup over chicken and add 1/2 can of water (this usually gets the rest of the soup out too); spread over chicken as much as possible.

Cook on LOW for about 6 hours until juices run clear.

If you have time or are around, you could add no yolk noodles to the cooker in the last 30 minutes.

or serve separately with Rice, cous cous, or no yolk noodles. YUM!!!!

    My husband and his college buddies loved this for dinner! I didn't tell them until the end that it was healthy, they couldn't believe it! This has definitely become a staple dinner in our house! Thank you! - 2/16/11
