Ingredients

3 -4 chicken breasts , cooked and diced
4 cups chicken broth
2 cups whole/vitamin D milk
2 garlic clove , chopped
1/2 carrot , shredded
1/2 onion , diced
3 cups fresh spinach , chopped
1 tablespoon olive oil
1 teaspoon thyme
1 teaspoon salt
dash of pepper
1 package potato gnocchi
1 tablespoon cornstarch dissolved in cold water for thickening if necessary
Directions
In 3-4 quart stock pot, saute the onion, garlic, and carrots in oil over medium heat until onion is translucent.
Add chicken, chicken broth, whole milk, salt, pepper, and thyme. Heat to boiling, then add gnocchi. Gently boil for 4 minutes, then turn down to a simmer for 10 minutes.
If needed, dissolve corn starch in 1/8 cup cold water and add to soup for thickening.
Add spinach and cook for another 2-3 minutes until spinach is wilted.
Ladle into bowls and enjoy!
Serving Size: makes 5-6 bowls
