Introduction

Ingredients

2 lb pork loin (roast), trimmed of visible fat
Salt and black pepper (to taste)
½ cup sweet onion, thinly sliced
1 cup spiced apple cider
1 cup cider vinegar
4 tsp Splenda
½ cup orange juice
1 cup dried apricots (or fruit of your choice)
1 cup dried prunes (or fruit of your choice)
Directions
Season pork with salt and pepper on all sides and place in large cooking bag.
Add onions, cider, cider vinegar, Splenda, apricots and prunes.
Marinate 1 hour turning occasionally (can be marinated over night).
Preheat oven to 350*F.
Heat a non-stick pan over medium heat.
Remove pork from bag (save marinade) and cook, turning once on each side, until golden brown, about 2 to 3 minutes per side.
Place back in cooking bag with marinade.
Bake 1 ½ hours or until done(160*F).
