Ingredients

    1 medium onion, chopped
    1/4 cup carrots, chopped
    2 tbsp minced garlic
    4 tsp olive oil
    3/4 lb boneless, skinless chicken breast, cubed
    14oz can diced tomatoes, undrained
    1 cup low sodium chicken broth
    1 cup uncooked couscous
    Red pepper flakes to taste
    Salt and Pepper to taste

Directions

Heat oil in large skillet over medium heat.
Saute' onions, garlic, and carrots along with red pepper flakes, salt, and pepper until tender.
Add chicken and saute' until cooked through, about 6-8 minutes.
Add tomatoes with juice and chicken broth, bring to a bubble.
Stir in couscous and turn heat to low.
Simmer covered for 5-8 minutes or until couscous is cooked and liquid is absorbed.
Fluff and serve immediately.
Also great served with a sprinkle of feta cheese on top!

    Woo!! Big Hit!! I added 1 red Bell pepper, a can of corn, 1/4 cup of pignoli nuts, 1 tsp cunin and 1/2 tsp curry to the recipe and DH LOVED IT!! So did I, but I tried to stay low key and soak up the kudos. :) I'm making this again, no question! - 1/28/11

    I made this using Near East's Toasted Pinenut couscous and I found it really brought out the flavor of the cumin and curry that I used. I don't know what it does to the nutrition info, but it tasted great! - 7/19/07

    In my opinion it needs a little more liquid but it's quite good and very adaptable! I've used shallots and celery instead of onions; mushroom-flavored couscous mix (plain is better). Using a rotisserie chicken from the grocery makes it extra fast and easy. - 3/17/10
