Ingredients

    1 medium head cabbage, chopped
    3 medium zucchini (about 3 cups), sliced
    3 tbsp onion powder
    1 tbsp garlic powder
    1 tbsp salt
    1 tsp ground black pepper

Directions

Heat the skillet over a medium flame.
Add about half the cabbage and zucchini and season with half of the seasonings, stir.
Add the remaining cabbage, zucchini and seasonings, stirring really well.
Cover and simmer on a low flame until the cabbage is soft (about 30 - 60 minutes).
The vegetables need no oil or water as they will naturally release a lot of moisture. Also, the cabbage will reduce by half as it softens. You can omit the garlic and onion powder, salt and pepper and season any way you like.

    I carmelized fresh onoin in a little olive oil and added everything to a crock pot with small diced carotts.Put leftovers in individual dishes and baked a little swiss cheese and parm. broiled till melted.No Cheese police please,just use a little,don't forget the pepper..Chef Jim - 8/3/08

    I made this tonight but i didn't use the powders or salt & pepper. I used salt free Mrs. Dash, added yellow and red bell pepper, fresh onion and fresh garlic. I can't have all that sodium. It was a big hit. I will definitely make this again. - 9/18/08

    This is Favorite cabbage recipe, with or w/out zucchini, but I use fresh garlic & a little cayenne. I also do add butter for flavor & since you need some fat to absorb nutrients & it works out ok since I usually end up eating this by itself, since it's so good I have to stop from eating it All @once - 11/9/08

    I cut the cabbage into wedges and sliced the length of the zucchini and grilled them on my George Foreman grill, then sprinkled with lime juice and coarse sea salt when I served it. It was fantastic! - 9/4/08
