Ingredients

    2 c cooked quinoa
    1 c cooked sprouted bean trio (costco)
    20 cherry tomatoes (whole)
    20 cocktail bocconcini (quartered)
    15 basil leaves (torn)
    6 tbsp balsamic vinegar
    2 tbsp olive oil

Tips

Use white balsamic vinegar if you don't want to discolour quinoa.
Put in fridge to marinate flavours, it's better if you let it sit overnight.


Directions

Make quinoa and bean mix (follow instructions on bag). Let cool.
Combine everything but vinegar and oil.
Mix vinegar and oil together and add to salad to taste.
Add salt and pepper to taste.


Serving Size: Makes approximately 8 servings
