Ingredients

Yogurt, plain, low fat, 0.25 cup
Salsa, 2 tbsp
Black Olives, canned (small-extra large), 5 large
Romaine Lettuce (salad), 0.25 cup, shredded
Green Onions, raw, 1 tbsp chopped
Petite Cut Diced Canned Tomatoes, 3 tbsp
Beans, pinto, 0.50 cup
Corn Tortillas, 1 tortilla, medium (approx 6" dia)
Cheese, Kraft Mexican Style Taco Cheese, 0.25 cup
Tips
Try adding some homemade taco seasoning to the yogurt. I like to get petite cut diced tomatoes in the can to save time cutting tomatoes. Just drain the liquid off.
Directions
No cooking necessary.
1. Mash pinto beans.
2. Spread in the middle of the corn tortilla.
3. Layer yogurt over pinto beans.
4. Add sliced olives.
5. Layer remaining ingredients.
6. Enjoy!

Yum! I made this using black beans, since that's what I had on hand (boiled from dried beans, then mashed). I also have a friend whom I'm SURE will want to try it, since he loves all things Tex-Mex, surely adding hot peppers before he indulges, since his palate always craves the extra kick 8-) - 3/17/12
