Introduction

Ingredients

    Canola oil cooking spray
    1 cup onion, chopped
    4 cloves garlic, minced
    2 cups diced ham, extra lean
    3 pounds small potatoes with skins (approx 13), washed & sliced @ 3/8" thick
    6 cups water
    2 Tbsp pepper, fresh ground
    1 Tbsp rosemary
    1 8 oz can sliced mushrooms with juice
    2 cans cream of mushroom soup, low sodium
    4 oz sharp cheddar cheese, low fat
    10 oz package fresh baby spinach, coarsely chopped

Directions

Spray canola oil cooking spray in large pot; add onions. Cook until transparent, approx. 5 minutes. Add minced garlic & cook another 2 minutes. Add diced ham, sliced potatoes & water; cook for 1/2 hour until potatoes are done. Add pepper, rosemary & mushrooms; cook 10 minutes more. Add the cream of mushroom soup; stir well & bring to a boil, then simmer for 15 minutes more to meld flavors. Coarsely slice the cheddar cheese and add to the soup, stirring until melted and mixed well into the broth. Remove from heat and add the chopped spinach; stir until well mixed and the spinach wilts. Serve immediately.
