Ingredients

1 Thomas' 100% Whole Wheat English Muffin
1/4 cup part-skim ricotta cheese
1/2 cup fresh or frozen (unthawed) blueberries
sprinkling of sugar or other sweetener (optional; not included in nutritional info)
Tips
It's hard to wait, but do allow the "Danish" to cool for a minute so you don't burn your mouth on the blueberries!
Directions
Move oven rack to top position and preheat broiler.
Split and lightly toast the English muffin. Top each half with 1/8 cup of ricotta cheese. Distribute blueberries over each half, pressing gently into the cheese. Sprinkle with a little sugar or other sweetener, if desired (not included in nutritional info).
Place on cookie sheet and put under broiler for 2-3 minutes (longer if using frozen berries), or until blueberries begin to bubble (keep an eye on it, as it can quickly begin to burn!).
Carefully remove with spatula (muffin may stick a bit) and serve. Watch for falling blueberries!
