Ingredients
-
So Good fat free original soy milk, 2 cup
Granulated Sugar, 8 cup
Vanilla extract, imitation, alcohol, 1 tbsp
Tips
Use a very large pot. Do not boil over. It makes a terrible mess.
Can be divided into half a batch.
Directions
Heat soy milk until scalded. Add 4 cups of sugar and stir until completely dissolved. Continue to cook and stir for 5 minutes. Add other 4 cups of sugar. Continue to stir until it reaches the soft ball stage.
Let cool about 5 minutes and put into canning jars. I use 5 half pint jars. When cool, store in fridge for up to 3 months. Might change colour, does not affect quality of product.
Whatever is left in the pot, I heat it until almost hard ball stage, let cool for 5 minutes add a tablespoon of hard margarine and pour onto a greased cookie sheet to harden.
