Number of Servings: 4

Ingredients

    Red Potatoes
    Rosemary
    Fresh Ground Pepper (to taste)
    Pam Olive Oil Spray

Directions

Preheat oven to 350 degrees.

Rinse off potatoes. Cut potatoes into approximately 1" pieces. Put into a bowl. Spray with Pam Olive Oil Spray, then sprinkle with dried rosemary. Sitr, spray again and add more rosemary.

Spread potatoes onto baking sheet. Add fresh ground pepper to preference. Bake 18-20 minutes until golden brown.

    I made these last night for dinner, only did bigger chunks, along with onion wedges, fennel bulbs, and carrots! (just drizzed a little EVOO on them...added fresh ground sea salt also....) delish! - 1/20/08
