Introduction

I wanted something that had fiber and protein. The Fiber One muffin mix had the fiber, but not much protein to speak of. So I added soy protein isolate because it doesn't have much flavor to interfere with the taste of the muffin. I added moisture to counter the additional dry ingredient by adding the apple and spices, and more baking powder to counter the increased density from the added ingredients. Ingredients

    Fiber One Apple Cinnamon Mix - 1 box
    2 Tbsp oil (as recommended for preparation by the box)
    3/4 cup water (as prepared)
    2 eggs (as prepared)
    52 grams Soy Protein Isolate
    1 small apple, grated
    1/2 cup applesauce
    1/4 tsp ground cinnamon
    1/8 - 1/4 tsp cardamon
    pinch of allspice
    3/4 tsp baking powder

Directions

Mix all dry ingredients in a bowl, separately mix all wet ingredients then add the wet stuff to the dry stuff. pour into muffin cups. Bake at 400 degrees F for 15-20 min
