Ingredients

    2 eggs, beaten
    2 cups corn flakes, crushed
    3 tbsp salsa
    2 tbsp fat free ranch dressing
    1 tsp chili powder
    1/2 tsp cumin
    20 oz ground chicken

Directions

Preheat the oven to 350*F.
In a large bowl, mix together the eggs, crushed corn flakes, salsa, salad dressing, chili powder, and cumin.
Add chicken and mix gently but thoroughly.
Shape into loaf on slotted baking pan or broiler pan.
Bake at 350*F for one hour, until internal temperature registers 175*F.
Cover with foil and let stand for ten minutes.
Slice and serve with sour cream and more salsa.

    I made this with turkey and Fiber One instead of the chicken and corn flakes and it turned out awesome! Will do again. It is very easy to make the longest part is the time it takes to bake. - 1/7/09

    great recipe... made this last night, and my friends who turned up when it was finished loved it. keeper, but I added some extra spices, like garlic, and red pepper I think next time I will add some cheese - 8/28/09

    We had it for dinner and it was AWESOME! Added a little extra salsa on top while baking (the "ketchup" on a regular loaf), and substituted ground turkey for the chicken. Excellent! Can't wait to have again. - 1/29/08
