Yummy, Lemony, Shrimp & Artichokes with Good-4-You Whole Wheat Pasta Yummy, Lemony, Shrimp & Artichokes with Good-4-You Whole Wheat Pasta
Number of Servings: 4


    2 tbsp Olive Oil
    Whole Wheat Spaghetti, cooked (pasta), 2 cup 24 medium Shrimp
    1 dash black Pepper
    2 tsp fresh Thyme
    3 cloves of Garlic
    1-14 oz can Artichoke Hearts
    4 fl oz White Wine
    1/2 can (10.75 oz size) Chicken Broth
    4 tbsp grated Parmesan Cheese (optional*)

Boil Water for pasta and cook pasta according to package directions. (20 min.)
Right before you drop the pasta start to saute Garlic in Olive Oil. Add Artichokes, Pepper, Thyme and juice of half a Lemon. (3 min.) (drop pasta) Add White Wine and Chicken Broth. Bring to a bubble. (5 min.)
Slice remaining lemon and add slices to pan.
Add Shrimp and cook until pink. (2 min.)
Top Pasta with Shrimp, Artichoke and Sauce.
Sprinkle with Parmesan Cheese (optional)
Divide into 4 portions and Enjoy!

  • This was delicious, light, and could be altered easily by adding more veggies. I added red pepper flakes along with the parmesan to spice it up a bit after cooking. Definitely will make again. - 7/28/08
