Ingredients

    1.5 cup Chicken or vegetable stock OR 1 can of low sodium broth

    1 cup Red lentils

    1/4 Chopped yellow onion

    1.5 TB Curry Powder

    2 tsp Olive oil

Tips

Be careful with the heat once you add the lentils or they will turn to mush. Done lentils should have a little bit of bite like al dente pasta just before overcooking it, but as long as they don't turn into paste you're still ok.


Directions

In a small pot heat the oil and the curry powder until it starts to froth or bubble. Add onions and cook 3 to 5 minutes. Add 1 cup of stock and bring to a boil. Reduce heat to medium low and add the lentils. Cover and simmer. Add more broth if needed and simmer until the lentils have between a pasta and rice texture. Serve immediately.
