Ingredients

    2 zucchini
    2 eggs
    Bread crumbs (I used Italian seasoned)
    Cooking spray

Tips

I've seen recipes that don't use the cooking spray. I think it adds a little bit more a crunch to the zucchini, but next time I make this I'll try it without and use panko crumbs instead.


Directions

Heat oven to 425 degrees. Beat two eggs and slice the zucchini into strips. Coat the zucchini strips in the egg and then drop them into the bread crumbs. A paper bag comes in handy, but a bowl will work fine as long as all sides are covered. Put the breaded zucchini strips onto a foil lined pan and then spray them with the cooking spray. Bake for 8 minutes. Carefully flip the zucchini and then spray again with the cooking spray. Bake another 8 minutes.

Serve with a side of marinara sauce for dipping.
