Ingredients

    2 eggs
    2 tbsp black beans
    2 tbsp lowfat shredded cheese
    2 tbsp chopped bell pepper
    2 tbsp salsa
    1/4 avocado

Directions

Mix together eggs, beans, cheese, and pepper. Microwave in a bowl or microwave-safe plastic baggie for 3 minutes or until cooked through. Top with salsa and avocado. Enjoy!
