Introduction

Ingredients

    Salt and Pepper to taste
    juice of 2 limes
    2 tablespoons good quality runny honey
    2 table spoons crushed fresh thyme leaves
    3 table spoon extra virgin olive oil
    4 - 4 oz skinned and flattened chicken Breasts

Tips

Each serving is 7 points Plus. If you cut back the olive oil to one tablespoon it will take the points plus down to 5 per serving


Directions

- take chicken breasts and season well with salt and pepper
- place side by side in one layer in a shallow over proof dish
- mix together the lime juice, honey, thyme and olive oil
-pour over or cover the chicken breasts and bake for 20 minutes in a preheated oven
-baste from time to time with the cooking juices
- once the juices run clear when the chicken is pierced it is done.
