Ingredients

    12 oz orange marmalade
    4T cider vinegar
    2T honey
    1T Asian hot garlic chili (not listed in calculated ingredients)
    2 lb. pork tenderloin
    1/2 c flour
    1/2 t salt
    pepper to taste

Directions

Combine marmalade, honey, chili sauce, pinch of salt and vinegar in small saucepan. Simmer until reduced by about 1/3, about 10 to 15 minutes.
Meanwhile cut tenderloin into 1" slices. Flatten slightly with the heel of your hand.
Combine flour, salt and pepper and zipper bag; toss medallions in flour mixture until coated completely.
Heat olive oil in large skillet over medium high heat. Sear medcallions 3 minutes on each side; add sauce, cover skillet and simmer for about 20 minutes.
