Ingredients

1 cup chopped onions
1 cup chopped celery
1 Tbsp butter
1/2 cup steel cut oats
1/4 cup regular oats (not quick cooking)
4 tsp Better than Boullion chicken base
4 cups water
1 cup milk
1/2 cup heavy cream (can use milk instead)
pepper to taste
Tips
This can also be done on high heat in a crock pot, if you keep an eye on it so it doesn't stick. This method takes between 3 and 4 hours, and will result in a thicker, more "oatmeal-y" texture.
Directions
Soften onions and celery over medium heat in butter.
Add oats and stir for a moment.
Add water, chicken base, milk, and cream. Bring to a boil and then turn down heat. Simmer, stirring occasionally, for about 45 minutes, or until oats are soft and mixture is thick and creamy.
Serving Size: Makes 6 servings of a little over 1 cup
