Introduction

Ingredients

1 lg. sweet potato
600 g. kohlrabi
150 g. carrots
150 g. green beans
10 rings green pepper (or red)
Tips
May steam vegies rather than microwave.
May serve salad dressing on side, if desired.
May add or change vegies used, according to season or desire.
Directions
1) cut sweet potato and kohlrabi into matchsticks.
2) matchstick 1/2 of carrots, grate rest.
3) Julienne green beans.
4) Take out 1/4 of mixture. Set aside.
5) Microwave rest of mixture in large glass mixing bowl. Cook times will vary according to microwave. Stir every 3 minutes, and stop cooking while vegies are still al dente.
6) Cut ends off pepper(s) and remove seeds. Cut into rings.
7) To plate:
Put a flat pile of raw vegies on plate.
Place pepper ring on top.
fill pepper ring to overflowing w/cooked vegies.
