Topped with mascarpone and boysenberry preserves.The bread that I have is a little higher calorie at 150 per slice, so you can easily cut the calories by using a different whole wheat bread. Ingredients

    2 egg whites
    2 slices whole wheat bread
    1 tsp ground cinnamon
    1 tsp vanilla extract
    1 tbs mascarpone cheese
    1-1.5 tbs Knott's Boysenberry Preserves

Directions

Whisk the egg whites, cinnamon, and vanilla together. Dip the bread in the mixture, making sure to cover all of the bread. Spray a nonstick pan with a little cooking spray and cook the bread for about 3-4 minutes each side, until a light golden brown. Once done, let them cool for a couple of minutes, then top with the mascarpone and boysenberry preserves. Enjoy!
