Introduction

Ingredients

    1/4 cup non-fat mayonnaise
    1/4 cup non-fat plain yogurt
    2 green onions, sliced
    1 lemon, juiced
    2 Tbsp chopped fresh dill (or can use 1 1/2 tsp dried dill)
    4 Salmon fillets (14 oz total)
    1 (16 oz) bag mixed salad greens
    Half of 1 (10 oz) bag baby spinach leaves

Directions

Preheat indoor or outdoor grill or oven broiler. In a small bowl, combine mayo, yogurt, green onions, lemon juice and dill. Place salmon on grill and cook 3 to 4 minutes, turn and cook another 3 minutes, or until cooked through. Arrange mixed greens and baby spinach on individual dinner plates; top each with a salmon fillet, then with dill sauce and enjoy!

Serving suggestion: Serve baked butternut squash on side!
