Ingredients

    3 oz. Neufchatel Cheese
    1/3 cup Fat Free Half and Half
    3 eggs (I use large)
    1/2 cup grated cheddar cheese
    1/3 cup grated Parmesan cheese
    4-6 green onions, thinly sliced
    salt and pepper

Tips

These servings are large, 1/4 of a pie. Wonderful served with a fruit salad. Using 2% or fat free cheddar and Eggbeaters would lower fat and calories.


Directions

Beat cream cheese in medium bowl util smooth. Gradually beat in half and half and eggs. Mix remaining ingredients. Pour mixture into unbaked crust.
Bake at 425 until crust is golden brown and filling is set, about 25 minutes. Cool 10 minutes before serving.
