Ingredients

    1/4 cup mayonnaise
    2 tbsp. unsalted butter
    2 1/4 cups self rising flour
    Salt, a pinch
    2 1/2 tsp. baking powder
    1/4 tsp. baking soda
    1/2 cup lowfat cultured buttermilk
    1/4 cup fat free half & half cream

Directions

Preheat oven to 400 degrees. Mix all the dry ingredients together. Dice the butter into little cubes (to create flaky layers), add the butter and mayonnaise. Add in the cream and buttermilk. Mix well. Roll out dough on a floured surface, adding flour as necessary to prevent stickiness. Use a biscuit cutter or drinking glass to cut out the biscuits. Biscuits should be about 1/2" thick. Arrange 2 inches apart on a greased cookie sheet. Bake for 15 to 20 minutes or until they start to golden.
