Introduction

Taste of summer with mango, pineapple and citrus. Taste of summer with mango, pineapple and citrus.
Number of Servings: 4

Ingredients

    12 large Shrimp, cooked
    1 Mangos
    1/2 small fresh Pineapple or about 2 cups
    1 red pepper
    2 Tbsp Orange Juice
    2 Tbsp Lime Juice
    1 Tbsp Olive Oil
    Water


Directions

Cook the shrimp in boilng water for a few minutes, or use pre-cooked shrimp.

Dice up the shrimp and mango into bite size pieces. Chunk up the pineapple and place in a food processor along with the orange juice and lime juice. Add a bit of salt and pepper. While processor is on, drizzle in olive oil and water if needed to thin. Divide into 4 portions and server over lettuce.
