    3/4 cup mashed cooked Pumpkin (not pie filling)
    1/4 cup Coconut Oil
    1 tsp Vanilla Extract

    1 cup Quinoa Flour (or other combination of Gluten free flours)
    1/2 cup whole oats
    1/2 tsp Baking Soda
    1/2 cup Raisins
    1/2 cup Organic Sucanat
    1/2 cup Xylitol (or sugar equivalent to 1 cup for both)
    1/2 tsp Cinnamon, ground
    1 tsp mixed spice
    1/2 tbsp ground Flaxseed


Baking time will depend on if you use just quinoa flour or another combination of flours....and the efficiency of your oven of course.


Preheat oven to 350 degrees.
Combine dry ingredients in one bowl and mix well. Combine wet ingredients (pumpkin, oil and vanilla extract). Combine the two and mix until just incoperated. Drop by the heaping tablespoon full onto parchment lined baking sheets and bake for 16-18 minutes
