Ingredients

0.5 tbsp rapeseed oil
1 onion, sliced
1 clove of garlic minced
2 inch ginger, peeled and crushed
2 chillies chopped
1 tsp tumeric
2 cardamom pods crushed
2 tsp garam masala
2 tsp curry powder
1 tsp ground corriander
2 large chicken fillets(skinless & boneless) cubed
2 400g canned chopped tomatoes
1 lime juiced
Small bunch of corriander
Directions
Heat veg oil in a large pan
Add onion and cook for 5 mins
Add chillies, garlic and ginger and cook stirring constantly for 3 mins.
Add the tumeric, cardamom pods, garam masala, curry powder and ground corriander and mix well.
Increase the heat and add the chicken fillets.
Add chopped tomatoes and 100ml water, bring to the boil and simmer for 20 mins.
To serve, add the the lime juice and chopped fresh corriander
