Introduction
These taste wonderful and my kids loved them! A great way to get them to eat fruit. I used decaf coffee granules and cut back on the fat by using applesauce. These should still be eaten in moderation! You could also add less chocolate chips to save on calories. I tweaked this recipe for a healthier version. Original recipe from Shelley Ross. Thanks! Ingredients

1 cup unsweetened applesauce
1/4 cup canola ( vegetable ) oil
1 cup granulated sugar
3 ripe bananas (mashed)
3 Tbsp. instant coffee granules, dissolved in
2 Tbsp hot water
1 tsp vanilla extract
1 tsp banana extract (optional )
2 1/4 cups all purpose flour
1/4 tsp salt
1 tsp baking powder
1 tsp baking soda
1 cup semisweet chocolate chips
Directions
Preheat oven to 350 degrees F (175 degrees C)
Blend oil, applesuace, sugar, egg, banana, dissolved coffee, and extract(s) in a food processor. ( I used my stand mixer ) Add flour, slt, baking powder, and baking soda and blend until flour disappears. DO NOT OVER MIX! Add chocolate chips and mix in with wooden spoon. Spoon mixture into paper-lined muffin cups. Fill 3/4 to the top w/ this recipe!
Bake for 25 minutes or until toothpick inserted comes out clean. Cool on wire racks.
