Introduction

This is based off a weight watchers recipe that I can no longer find. I guessed and it came out pretty good. A lot lower in fat that most of the commercially available alfredo sauces. Ingredients

    2 tbs light margarine ( I use blue bonnet light)
    2 2/3 c skim milk
    4 oz fat free cream cheese
    2 tbs whole wheat flour
    2 cloves garlic
    1 1/2 cups shredded parmasean cheese

Tips

Shredded parmasean cheese is found in the dairy case with the other shredded cheeses or in glass jars in the pasta isle. Grated parmasean can be used, but I don't know the measurement for it.


Directions

Heat 2 tbs light margarine in heavy pan over medium heat. Add garlic and saute for about 2 minutes.

Stir in the flour until thick. Slowly pour in milk and stir until smooth and thickening (takes about 8-10 minutes).

Add it cream cheese and stir until melted and incorporated (2-5 minutes cut cream cheese in small pieces to make it go faster)

Slowly stir in the shredded parmasean cheese. Continue to stir until cheese melts through. It will be stringy for a bit, but keep stirring until smooth.

Serve over your favorite pasta.

Serving Size: makes 8 1/4 c. servings if you cook it down properly
