Ingredients

    1 cup steel cut oats (Dry)
    1/2 cup quinoa (dry)
    4 cups water with oats, and 1 cup water with quinoa
    5 cups rhubarb, diced, frozen or fresh

Tips

( Using steel cut oats adds to prep time as they require simmering for about 30 min after being brought to boil. You can use oatmenal flakes but they do not contain the same amount of fibre and nutrition.)


Directions

prepare oatmeal cereal and quinoa separately as per package instruction. cook rhubarb, either from fresh or frozen. Blend together and refrigerate, Keeps for up to 10 days, or to your comfort level.
Garnish with Greek yogurt, flax seeds, and maple syrup

Serving Size: makes 13.5 half cup or 125 gr servings
