Ingredients

    1 cup frozen peas
    1 tablespoon chopped fresh mint
    1/4 cup crumbled feta
    2 cups prepared brown rice
    black pepper to taste
    1 lemon, cut into wedges

Tips

Pair with beef or lamb. Alternate serving suggestion: Hollow out zucchini or pattypan squash, then fill with the peas and rice. Bake at 375 until the squash is tender, about 20 minutes.


Directions

Place the peas in a medium microwave-safe bowl and cook on high for two minutes, until heated.
Mix in the rice and the mint. To serve, spoon 3/4 cup peas and rice into a bowl, then sprinkle on one tablespoon of feta. Sprinkle with black pepper to taste and squeeze lemon wedges over each serving, to taste.


Makes 4 (3/4 cup) servings
