Ingredients

    Shallots, onions, asparagus, carrot, mushrooms, chicken broth, non-fat yogurt, skim milk, seasonings (garlic powder, salt, pepper, thyme, bay leaf, dill).

Directions

saute onions and shallots in flax butter (1/2 butter 1/2 flax oil). Add diced carrot, mushrooms and asparagus chopped with tips reserved. Saute 5 minutes and then add 4 cups chicken broth. Let simmer until carrots & asparagus are done. Let cool and then puree in blender until smooth. Put back into pot and add asparagus tips. Bring to boil and add yogurt and milk and lower heat so that it doesn't boil. Serve warm with a dollop of sour cream.
