Introduction

This is quick and easy burrito I make often, specially if I have to eat on the go. I happen to use a few strips of last night left over pork tenderloin but you can use just about any meat you like. I added an egg, because it was breakfast, but it also makes a great snack (no eggs will take off 70 calories) This is quick and easy burrito I make often, specially if I have to eat on the go. Ingredients

    1 egg, Grade AA Large
    1 mini red bell pepper, chopped
    1 mini yellow bell pepper, chopped
    1 medium slice button mushroom, sliced
    2 slices of pork tenderloin, chopped
    1/8 tsp Balsamic Vinegar

    1 tortilla 8' Multi-grain

Directions

Chop up the peppers in small pieces. Spray small cast iron skillet with Pam. While the peppers sizzle, slice mushroom and tenderloin. Add to skillet. Splash a little balsamic vinegar on it and saute for a few moments (just long enough to get meat warmed up), then place on tortilla. Scramble one egg with Pam (you can use same pan for added flavor to your egg) and add to tortilla. Roll up and enjoy on the go!
