Introduction

This is a springtime variation with white chocolate pieces. I also like the dark chocolate pieces for the antioxidant values. Makes 40 bite sized cookies. Ingredients

    Preheat oven to 375 degrees.
    Soften 1 stick unsalted butter in microwave (1 minute @ 20% power).

    Cream together butter and 1/4 cup STEVIA IN THE RAW. Add one ripe banana & cream again. Add egg & vanilla. Mix well.

    Mix together the dry ingredients: 1 cup EACH of old fashioned oatmeal and whole wheat flour, 1/2 teaspoon of BAKING POWDER, 1/2 dried cherries (OR one small jar of maraschino cherries, destemed, rinsed, & chopped fine), and 1/2 cup of well chopped walnuts.

    Grease two cookie sheets. Drop by spoonfuls onto sheet leaving about 1 1/2 between the cookies. Bake at 375 degrees for 10 minutes. Remove from sheet immediately to cooling racks. Enjoy these!!

Tips

Substitute white chocolate for dark chocolate.
Substitute almonds for walnuts.
Substitute gluten free flour for whole wheat flour.
