Introduction
This is made from a recipe my mother used to make with a 6 oz can of lemonade concentrate, which has tooo many calories :) Using 1 pkg of Crystal Light (that makes 2 qt of lemonade) is a ok compromise for me, although I'd like to get away from the aspartame. Trader Joe's makes one, but I don't have a TJ close to me...Baking them in canning jars came from a Pinterest recipe found at "The Italian Dish" blog. Ingredients

2c cottage cheese
1 pkg (2 qt size) Crystal Light
2 large eggs
1/4 c Truvia baking blend
1 Tbs flour
4 Tbs Dannon nonfat plain yogurt
1/2 c graham cracker crumbs
2 Tbs Fiber One crumbs (3 Tbs cereal grinded to make ~2+ Tbs)
1/2 Tbs Truvia baking blend
2 Tbs coconut oil, melted
Tips
It is REALLY yummy to cut up strawberries, place into jars over cheesecake and then cover with a strawberry glaze... :)- The strawberry topping is not included in the calorie count!
Directions
Coat inside of 6 - 6oz jelly jars with an oil spray (I use a "Misto"). Mix the graham cracker crumbs and fiber one crumbs together with the sugar and coconut oil. Place 1 full Tbs of mixture in the bottom of each jar and tamp down (I use the end of my rolling pin). Next blend the cheesecake ingredients all together; I use a blender stick to blend the mixture until the cottage cheese is smooth. Pour ~1/2c batter in each jar, on top of the crumbs. Set in a baking dish and pour hot water into dish, so that the water level is about half way up the jars. Bake at 325 for 30 minutes, turn off oven and leave in for another 30 minutes. Take out and use a towel to lift the jars out and place on a dish towel on the counter. Cool, then refrigerate.
