Ingredients

1/4 c sugar (or add more to your taste; original recipe called for 3/4 c!)
2 Tbs cornstarch
3/4 c water (Sprite or 7-up can be used)
2 Tbs (1/3 pkg) of strawberry flavored Jell-O if making a strawberry pie
Tips
Goes well with any cheesecake recipe...The photo is of my recipe for "Individual Lemonade Cheesecake" here in Sparkrecipes.
Directions
In 4 cup glass measuring cup, mix sugar and cornstarch, then add water, stirring with a whisk. Microwave on 60% heat, stirring every minute or so, til mixture is thick. Stir in jell-o. Cool slightly, then stir in strawberries or pour the jello mixture over artfully arranged strawberries. If making a blueberry pie, heat the blueberries in the mixture til dark blue, stirring as needed. I prefer making this on top of the stove over medium heat, but occ am in a rush and make it in the microwave. Garnish!
Serving Size: Makes 6-8 servings, depending on how you slice your pie!
