Introduction

Ingredients

    1 onion, chopped
    1 green bell pepper, chopped
    1 jalapeno pepper, chopped
    2 minced garlic cloves
    vegetable cooking spray
    3 t chili powder
    1 t dried oregano
    1 t cumin
    1 can reduced-fat cream of mushrom soup
    1 can reduced-fat cream of chicken soup
    1 can diced tomatoes and green chiles, undrained
    1 can Black beans
    2 1/4 cups chopped cooked chicken (canned chicken works great!)
    2 cups crumbled tortilla chips
    5 T chopped fresh cilantro, divided
    1 cup (4 oz) shredded reduced fat cheddar cheese


Directions

Saute first 4 ingredients in a nonstick pan coated with vegetable cooking spray over medium heat for 8 minutes. Stir in next 9 ingredients, and 4 T cilantro; spoon into a lightly greased 13x9 inch baking dish.
Bake, covered, at 350 for 30 minutes or until bubbly.
Toss remaining 1 T cilantro with cheese. Uncover casserole, sprinkle with cheese mixture. Bake 3 minutes or until cheese is melted.

    This was pretty good. I think next time I will try making it with 2 cream of chicken soup and omit the cream of mushroom. It gave it somewhat of an odd flavor. Overall good though. I'll try it again. - 7/9/08

    Like the flavors in this. I do agree that it is too spicy for the kids and mine would not touch it. I added a can of corn to this and it tasted great! - 5/20/08
