Ingredients

    1 egg or egg replacer (Tbsp chia and 3 Tbsp water)
    1/2 cup applesauce
    1/4 cup dark brown sugar, packed
    1 cup greek yogurt, plain
    1.5 tsp cinnamon
    1 tsp allspice
    pinch salt
    1/2 cup whole wheat flour
    1.5 cups oats
    2/3 cup chopped walnuts
    1.5 cups fresh currants

Directions

Mix chia with water and let gel for 5 minutes (or whisk an egg) in a large bowl.
Add the rest of the ingredients in order.
Put into muffin tins.
Bake at 350 for 15 to 20 minutes.
