Ingredients

- 1 lb of chicken breasts (the original calls for 2, but I made mine with 1 and the calories from this recipe only reflect 1lb) - chopped into chunks
- 3 tbsp Seasame or vegetable oil
- 1/2 large onion, peeled and chopped
- 1 green bell pepper, sliced thinly
- 2 tbsp curry powder
- 3 tbsp granulated sugar
- 2 cloves of garlic, chopped (or 2 tbsp pre-chooped garlic)
- 1 8oz can tomato sauce
- 1 16oz can diced tomatoes
- 1 14oz can light coconut milk
Tips
Note: The mixture is very liquid-y at first, and will bubble as it simmers. Make sure to stir at regular intervals and expect it to start thickening at about 40 minutes of simmering
If you want to make the meal stretch to feed more (maybe 6 instead of 3-4), I would recommend adding another lb of chicken but just keep in mind it will change the calorie calculation of this particular recipe.
Directions
1 - Prepare ingredients by chopping onions and slicing bell peppers, as well as cutting chicken into about 1" cubes
2 - Heat oil in large skillet on medium heat and add curry powder - stirring to mix well.
3 - After curry powder is well mixed, add onions and garlic and bell peppers
4 - After onions are translucent, add cubed chicken and cook until chicken is browned and no longer pink in middle (maybe 10-15 minutes)
5 - Add can of tomato sauce, coconut milk, and diced tomatoes, mix well.
6 - Once liquids are heated, add sugar and mix well
7 - Simmer, uncovered, on medium heat for 45-55 minutes, until sauce thickens, stirring regularly
