Number of Servings: 9


    1 large zucchini squash
    1 tblspn extra virgin olive oil
    1/2 cup tomato sauce with tomato pieces
    1/2 cut Sargento reduced fat shredded cheddar jack
    cayenne pepper
    dry basil


If you don't like spice, leave out the cayenne pepper. Feel free to substitute cheese of your choice. You can use meat sauce also. Stores great in refrigerator!


Slice zucchini into 3/4 inch slices and baste with olive oil. Wrap in foil, bake in oven at 300 for about 6 minutes each side. Take out of oven, season each slice with sprinkle of cayenne pepper. Spoon tomato sauce over each slice. Sprinkle with dry basil and salt. Top with cheese. Return to oven till cheese is melted. Don't over bake. Squash should be firm.

Serving Size: Makes 9 3/4 inch "pizzas"
