Introduction

Moist and puffy, these are a great and creamy dessert! Moist and puffy, these are a great and creamy dessert!
Number of Servings: 6

Ingredients

    1.5 cups grated carrots
    1 container Siggi's Coconut yogurt
    2 eggs
    1/5 cup dried cranberries
    2 tbsp maple syrup
    1 tsp cinnamon
    1 tsp ginger

Tips

These come out moist and soft. For more durability, add up to 1 cup coconut flour or coconut flakes.


Directions

Grate all the carrots (this is the worst part, so give the duty to a child or watch a good TV show while you grate em up!)
Mix everything together in any order you like, it truly doesn't matter. Bake for 30 minutes at 350, testing after 25 minutes to see if a toothpick comes out clean.

The little souffle/cakes will deflate a little when cooling. This is sad, but inevitable. Don't worry :)
