Ingredients

    1 1/3 pound cubed pork, cut in small pieces
    2 T Extra Light Olive Oil
    12 oz roasted, seeded chopped green chiles (I used Big Jim chiles)
    15 oz can diced tomatoes
    10 oz can diced tomatoes and green chiles
    1/2 t onion powder
    1/4 t garlic powder
    1/2 t fresh minced garlic
    1/2 t ground cumin
    1 medium onion, chopped
    1/4 c flour

Tips

I used Big Jim chiles which are a medium hot heat, but you can use mild or hotter depending on your desired taste.


Directions

In large pan, brown pork in olive oil. In separate pan, combine chiles, tomatoes and spices; bring to boil and simmer while pork cooks. When pork is almost all browned add chopped onion and cook until just translucent; remove from heat and stir in flour. Return to heat and brown flour and pork mixture...be careful not to burn it. Pour chile mixture into pork and mix well; bring to boil and simmer 10 minutes. Pour all into 3-quart crock pot, fill to 3/4 full with water and cook on high until mixture boils; then reduce heat to low and cook 6-8 hours. Thicken as desired with additional flour mixed well with small amount of water.
