Ingredients

    lb. ground beef
    2 T minced garlic
    1 large carrot, grated
    1 medium onion, chopped
    1 stalk celery, chopped
    3-4 large potatoes, peeled and chopped
    2 cans (or 4 cups) chicken broth
    1 can cheddar cheese
    Parsley, basil, and black pepper to taste
    4 T butter
    cup flour
    1 cup milk

Directions

Brown and drain ground beef
Add garlic, carrot, onion, and celery cook on medium heat until tender
Add potatoes, broth, and cheddar cheese
Add parsley, basil, and black pepper to taste bring to a boil, reduce heat, cover, and simmer 10 minutes or until potatoes are tender
In a small skillet melt butter over medium-high heat add flour, stir constantly for 3-5 minutes until bubbly
Add butter mixture and milk to soup, stir and allow to thicken
