Ingredients

    ½ lb. ground beef
    2 T minced garlic
    1 large carrot, grated
    1 medium onion, chopped
    1 stalk celery, chopped
    3-4 large potatoes, peeled and chopped
    2 cans (or 4 cups) chicken broth
    1 can cheddar cheese
    Parsley, basil, and black pepper to taste
    4 T butter
    ¼ cup flour
    1 ½ cup milk

Directions

Brown and drain ground beef
Add garlic, carrot, onion, and celery – cook on medium heat until tender
Add potatoes, broth, and cheddar cheese
Add parsley, basil, and black pepper to taste – bring to a boil, reduce heat, cover, and simmer 10 minutes or until potatoes are tender
In a small skillet melt butter over medium-high heat – add flour, stir constantly for 3-5 minutes until bubbly
Add butter mixture and milk to soup, stir and allow to thicken
