Introduction

Ingredients

    Apples, peaches, pears etc. 5-6
    Lemon, zest + juice 1
    Sweetzfree 1/4 tsp
    Splenda 1 tbsp
    Cinnamon (optional) 1/8 tsp
    Nutmeg (optional)
    Egg, large 1
    All-purpose flour 1 1/4 cups
    Baking powder 4 tsp
    Milk 3/4 cup +

Directions

Preheat oven to 400.

In the mixer, beat the egg till foamy. In a large bowl mix Splenda and spice (if used). Zest the lemon into a medium bowl, then squeeze the juice into the large bowl and mix. Peel, core and slice the apples or whatever, cut the slices into quarters. Place in the large bowl and mix.

Add the flour and baking powder to the medium bowl with the lemon zest, and mix.

In the mixer set on low, add the Sweetzfree and mix, then mix in flour mix and milk and beat well on high. Add chopped fruit and mix in gently with a spoon. Transfer to non-stick dish.

Bake 40-45 minutes, until batter is beginning to brown. Check with toothpick. Allow to cool at least 1 hr. Can be frozen.
