Introduction

Ingredients

    2 cups AP flour
    1 1/2 tsp baking soda
    2 tsp cinnamon
    1 tsp fresh ground nutmeg
    About 3 tbsp fresh grated (microplaned) ginger
    1 tsp kosher salt
    1 + 1/2 cups sugar
    3/4 cup salted butter
    1 egg
    1/3 cup molasses

Directions

Cream together the butter and 1 cup of the sugar. Beat in the egg and the molasses. Mix in remaining (dry) ingredients except for the 1/2 cup sugar until the dough forms.

Put the 1/2 cup sugar in a large bowl. Roll dough into 1" balls, drop each ball in the sugar and coat it, and then place them on cookie sheets covered with lightly greased parchment.

Leave about 2-3" inches between each ball, because they spread out like crazy.

Bake at 350 for about 15 minutes, until they start cracking on the top. They will be extremely soft and puffy, but they harden and flatten as they cool. I just moved the entire piece of parchment onto the baking racks rather than trying to move the individual cookies, since they wanted to fall apart.
