Ingredients

    2 cups Corn Bread Stuffing mix
    1 cup low sodium chicken broth
    1 apple, chopped
    2 stalks celery, chopped
    1 medium onion, chopped
    1 cup fresh cranberries

    (Meat of your choice. I use 12 - 16 oz. of lean center cut boneless pork chops).

Tips


Using lean boneless pork chops (3 oz. per serving) adds approximately 160 calories.


Directions

Mix all ingredients. Spray inside of crock pot with non-stick spray. Put half of stuffing mix into crock pot, cover with meat of your choice, cover with remaining stuffing mix. Cook on low 6 - 8 hours until meat is tender.

    Very Good
    This dish was very good, cornbread had a real nice taste, apple and cranberry add just the right tartness and the pork chop stayed really moist. Since this was a crock pot dinner and also a running day, it worked out real good; will do again. - 12/23/13
