Ingredients

    1/2 cup quinoa
    4 bell peppers
    28 oz enchilada sauce
    2 small zucchini
    1 cup cilantro
    juice from 1 lime
    1 small red onion
    15 oz can black beans
    1 cup shredded cheese
    paprika
    cumin
    salt
    pepper
    2 minced garlic cloves

Tips

These freeze well. Usually after cooking and cooling, I separate them into 8 individual freezer containers for a quick lunch anytime.


Directions

Half Peppers, Prepare quinoa, Mix all ingredients and stuff the peppers, top with 28 oz can enchilada sauce and the cheese. 400 degrees for 30 minutes.
