Ingredients

    1 pound tart cherries, pitted
    1 pound clementine slices
    2/3 cup plus 1/2 cup sugar, divided
    4 large eggs
    4 tablespoons all-purpose flour
    3 teaspoons vanilla extract
    2/3 cup evaporated nonfat milk
    Confectioner's sugar for dusting

Directions

Place rack in upper third of oven; preheat to 375F. Coast a 13x9 casserole with cooking spray. Combine cherries and 1/3 cup sugar in the prepared dish. Bake until the cherries are tender and very juicy, about 20 minutes. Drain juices from cherries and set aside. Top with clementine slices and another 1/3 cup sugar.

Meanwhile, whisk eggs, flour, vanilla, and the remaining 1/2 cup sugar in a mixing bowl until smooth. Whisk in evaporated milk.

Make sure fruit is evenly distributed over bottom of casserole. Pour egg mixture over fruit. Bake until puffed and set, 12 to 15 minutes. Dust with confectioner's sugar and serve immediately, with reserve cherry juices spooned over the top.
